Hotel Los Sibileys

Hotel Los Sibileys has four double and twin rooms, any of which can be booked for single occupation. Each room is simply and comfortably furnished in the traditional rustic Spanish style and all have modern, private bathrooms with showers.

All rooms enjoy unobstructed views of the unspoiled surrounding countryside whilst some also overlook the pool and terrace.

Although we consider ourselves a simple, rural hotel, we do offer some of the luxuries you may expect to find at larger, more commercial establishments. These, of course, include fantastic cusine prepared from the very finest local, seasonal produce and our bar is open whenever you need it. Needless to say, you’re not constrained to set meal times.

Whilst you’re thinking about dinner why not laze for a while on our landscaped terrace or take a dip in our private pool? Perhaps a glass of chilled cava and a soak in the poolside jacuzzi before a long, lazy siesta under the palm-shaded gazebo.

Hotel Los Sibileys is noted for its superb food and drink. Steve has a lifetime’s experience as a top chef and restaurateur in the UK and he’s brought his unique style to the superb local and seasonal ingredients of the Murcia region.

Ever stayed in a hotel where the chef asks “What would you like to eat tonight?”. If this sounds good to you, that’s the way we’ll do it. Otherwise, our set menus range from the simplest, brilliantly prepared regional dishes to complex and indulgent classics. The sample menus on the right will give an idea of the range and quality of the food available at Hotel Los Sibileys.

But remember, great food is about enjoyment and if plain and simple is what you prefer, that’s fine by us.

As we spent over thirty years running a highly successful restaurant in the UK, we know more than a little about wine. If there’s a favourite missing from the Los Sibileys wine list, we’ll get it for you. The Andalucia region is also home to some of Spain’s more famous brewers and distillers and we always have a small but very representative range of their best products. Again if you want something more exotic, we’ll get it for you.
